Giving is Satisfying
Bergen County residents who are APPLE Program participants, received delivery of assorted fresh produce and information on available resources. The smiling faces and kind words were the best responses to the program.
With the Holidays season approaching we would like to remind everyone to follow the CDC recommendations while shopping and celebrating.
Pumpkin plays a big part in Thanksgiving Dinner menu. You can enjoy this wonderful vegetable in different ways. Delicious pumpkin soup can be one way to serve this traditional vegetable to your family and guests. Beet and radish slaw can be a lighter and healthier version of the traditional slaw.
Beet and Radish Slaw
1 yellow beet, peeled and cut into 1/8 inch 1 teaspoon toasted sesame oil
Julienne (matchsticks) 2 teaspoons canola oil
1 red beet, peeled and cut into 1/8 inch julienne 1 teaspoon unsalted rice vinegar
1 6 inch daikon radish, peeled and cut into 1 teaspoon sea salt
1/8 inch julienne
Combine all ingredients in a non-reactive bowl, cover, and let stand at least ½ hour. Season to taste and serve. Makes 2 servings.
Pumpkin & Parmesan Soup
2 tablespoons butter 1 onion (chopped)
2 pounds pumpkin or butter squash (deseeded and cubed) 2 -garlic cloves(crushed)
4 tablespoons low fat cream 6 cups hot vegetable broth
4 tablespoons shaved Parmesan a pinch of curry powder
2 bay leaves small bunch of fresh cilantro
salt and pepper
Melt butter in the casserole over medium-low flame. Add the onion and pumpkin and saute, stirring for 5 minutes. Add the garlic and bay leaves and cook, stirring for an additional 5 minutes. Add the stock. Increase the heat, bringing the soup to a boil, then simmer for 10 minutes or until the pumpkin is soft. Remove the bay leaves. Puree the soup using a blender until smooth. Return the casserole to low heat and stir in the cream. Season to taste with curry powder, salt and pepper.Serve with a few slivers of Parmesan and some cilantro leaves. Makes 4 servings.
