The Verdict Is In
Members of the Early Childhood Preschool department at the Boys & Girls Club of Clifton reaped the rewards of what they harvest. In June, our preschool students planted radishes and chives (among other vegetables and herbs), using the “Farm to Preschool” program curriculum. With the help of our New Jersey Healthy Communities Network partner, City Green, our preschoolers created their own healthy snack using the produce grown in our garden and City Green’s farm. Our photo shows the preschool members verdict after they tasted their first Strawberry Radish Salsa that they made. If our kids liked it, yours will too. Little thumbs; big impact.

Ingredients:
Fresh Strawberries
Radishes
Scallions or Chives
Mint
Lemon Juice
Salt
Directions
- Dice strawberries and radishes and add to a medium size bowl.
- Finely chop scallions and mint, and add to the bowl.
- Squeeze in the juice of a fresh lemon.
- Add a generous sprinkle of salt.
- Stir to combine.
- Serve with whole grain chips, tacos, or over grilled fish or chicken for a tasty treat.
