We started with a red wagon, but what we really needed was a truck and a bus full of volunteers to help with our APPLE Program deliveries of fresh produce.

Below is a very easy recipe for cherry tomato and cucumber salad and some tips on how to prepare and store tomatoes. Learn some interesting facts from history of tomatoes.

Easy Cherry Tomato and Cucumber Salad

   1 pint cherry tomatoes                                              pinch of sugar
  1 small cucumber                                                         salt to taste
¬†¬† ¬ľ cup rice wine vinegar¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬†1 tablespoon cilantro

Stem the cherry tomatoes; slice in half. Cut cucumber in half crosswise, quarter the halves, and slice. Combine all ingredients in a bowl and let stand at room temperature, stirring Occasionally, for 20 minutes or so. Serve at room temperature. Makes 4 servings.
