Building on Past Efforts
For 2019, Lincoln Park Health Department has decided to build on our efforts from the past year. Department Intern Sarah Jacob met with fifth graders at Lincoln Park Middle School to hear about their experiences with hydroponic gardening. While students discussed the process of setting up their hydroponic tower, anticipating the first sprout, and transferring the seedling into the growing system, this was also an opportunity for them to learn about the essential vitamins stored in their garden produce. Following this discussion, students got the chance to make their own mason jar salads using their class produce and others donated by the health department. First we squeezed some fresh lemon juice and mixed it with olive oil for our dressing. After adding the dressing to our jars, we started layering with the veggies to our liking – tomatoes, bell peppers, swiss chard, hmmm-mmm – and finally topped everything off with some feta and a sprinkle of salt and pepper. What could be a better way to start your school day than with a fresh dose of vitamins for your brain and body!
