Healthy Cooking Classes on Facebook Live!
On Saturday, April 3, 2021, Family Promise Union County hosted its first virtual healthy cooking show called “Cookin’ with Kelly!” on Facebook Live. Registered dietitian Kelly Donovan demonstrated three delicious and nutritious recipes from Good Housekeeping’s “Easy Meal Prep,” the “ultimate playbook for make-ahead meals.” The Family Promise community of guests, clients and volunteers tuned in and learned about how meal prep saves time and money. Cooking in big batches and freezing individual portions for grab and go meals help make meal prep easy, as well as economical, during a busy week. Participants also learned about healthy alternative ingredients, which will support a strong immune system. Mexican Meatballs with Chipotle Sauce substitutes half of the chopped beef with a can of lentil beans, which have a “meaty” consistency and are loaded with protein and fiber. Zucchini tots, a yummy way to cut down on carbohydrates found in “tater” tots, using shredded zucchini and served with a creamy yogurt feta dipping sauce. Spiced peach and quinoa muffins also offer a super-charged start to the day with protein and fiber. No added sugar, as honey provides the sweet flavor in these healthful breakfast muffins. 20 show participants will receive a copy of the “Easy Meal Prep” book, along with a $25 food gift card. “Cookin’ with Kelly” can be viewed at the Family Promise Union County Facebook page. Family Promise Union County provides emergency shelter, food and comprehensive services to families and individuals who are experiencing homelessness in Union County with a professional staff and a vast volunteer network.
