Healthy Eating on a Budget
It’s hard to believe that summer is winding down! We have been working hard with the residents at our family campus to use this break in our usual programming to put together a thoughtful and productive curriculum for our teaching kitchen. We have compiled 10 nutritious and budget friendly recipes that our residents feel would work with challenging schedules and incorporate a variety of pallets. As we cannot currently have volunteers on site, we are working with our culinary teachers to put together small virtual cooking classes. Although there are many challenges to creating the fun and collaborative atmosphere of our previous classes, we are hoping that we can still provide a forum for discussing ways to make feeding a family healthy meals easier and more affordable. Our teachers are also planning to discuss strategies for incorporating canned food and other items often available from food pantries into a healthy weekly menu.
Our “Healthy Kids” cooking class has always been a highlight of the week for our little ones. As many of our kids will be attending school virtually this fall, we are looking for ways to do live healthy eating activities in the evenings. We are currently planning outdoor events that give kids a chance to be active followed by a healthy snack and nutrition discussion – their favorite is always “Eat the Rainbow”!
